High Pressure Processing: How it Works

In many food applications, packaging solutions must be sterile, controlling pathogens and microorganisms to prevent spoilage. In many processes, this is done by heating the food to a high temperature during the packaging process. However, this isn’t always the most ideal solution for processing food — heat can affect food chemistry, impact food quality and reduce nutritional value. In these cases, high pressure processing (HPP) may be an alternate solution. HPP packaging works by sealing the product in its intended package which is then batch processed in a pressure chamber and processed under high-pressure processing conditions. In simple terms, the high pressure environment inactivates pathogens and microorganisms, creating a safe internal environment without heat for the intended food application.
