High Pressure Processing: How it Works

For many food applications, packaging must control pathogens and microorganisms to help prevent spoilage. High pressure processing (HPP) offers an alternative by inactivating pathogens without exposing products to high temperatures.

With HPP packaging, the product is sealed in its final package before being placed in a high-pressure chamber. The pressure inactivates pathogens and microorganisms, creating a safe internal environment while helping preserve freshness and product quality.
